Abstract

The book is the product of exploratory and empirical research conducted within the dairy research project on "Understanding the traditional functioning of the milk supply chain in El Cairo City, Egypt" (funded by the AIRD, 2012-2015).

It was based on a survey of 73 urban and periurban milk producers, twice-yearly monitoring of three intermediaries over two years (2015-16), and a rapid, exhaustive survey in three sociological sectors of Cairo, of 73 dairy product sellers. The results of the surveys were combined with data from the CLIMED research project (ARIMnet project, 2012-2016) in the western Nile delta (175 farms) and the SIADEEP project (Danone Ecosystème Foundation, 2014-2017) in Beni Suef governorate, south of Cairo (61 farms).
