Dairy processing in Jordan is practiced by women at home to support their families. However, the quality of produced products is questionable from the hygienic point of view. They frequently face problems like souring of yogurt and blowing of cheese, yogurt zeiosis and bubbling and molding of jameed. The project focuses on practices and knowledge capacity to enhance dairy product quality
